Chocolate Cake with European Canned Peaches from Greece

Ingredients:

For the Cake:

 

  • 1 ¾ cups (220g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • ½ cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water

 

For the Topping:

 

  • 1 can of Greek canned peaches, drained (you can use them whole or slice them)
  • A little honey or syrup (optional, for extra sweetness)

 

Instructions:

 

  1. Prepare the Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
    • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Mix until combined.
    • Slowly add the boiling water, mixing until the batter is smooth. It will be quite runny, but that’s normal.
    • Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then remove it from the pan and allow it to cool completely on a wire rack.
  2. Prepare the Topping:

    • While the cake is cooling, drain the canned peaches and set them aside. You can slice them if you prefer smaller pieces.
    • For a sweeter topping, drizzle some honey or syrup over the peaches.
  3. Assemble the Cake:

    • Once the cake has cooled, place it on a serving platter.
    • Arrange the peaches on top of the cake, either whole or sliced, depending on your preference.
    • Optionally, you can drizzle a little extra honey or syrup over the cake and peaches for added flavor.
  4. Serve and Enjoy:

    • Slice and serve your chocolate cake with the sweet, juicy Greek peaches on top!
